I made meatloaf last week. Bacon wrapped, stuffed meatloaf to be exact and I was trying to think of some sides to make. I wanted potatoes but not the usual baked, mashed, or fried. I wanted something different. Flash of inspiration – scalloped potatoes.
I started looking through some recipes and found a couple I liked and combined and tweaked them to make my own take on this yummy dish.

Directions:
- Preheat oven to 400 degrees F . Grease a 1-quart casserole dish.
- Spread 1/3 of the potatoes into the bottom of the prepared dish.
- Mix flour, salt, Italian seasoning, and onion powder together in a bowl; sprinkle about 1/3 of the mixture over the potatoes.
